One Pan Sea Bass in Lemon Butter Sauce with Spinach & Vegetables

Quick and easy is what I like and this was perfect at the end of a long day of work. At the moment Sam is working later than usual, which means we all eat at different times of the evening for dinner. I also don’t have as much time anymore so time to do anything has changed dramatically. But this dish was so simple, rustled up in less than 20 minutes and tasted delicious.

The ingredients below is for an individual person, but just add a little bit more of everything if you’re cooking for more than one.

Preparation: 7 minutes

Cooking: 13 minutes

Ingredients:

  • 1 sea Bass fillet
  • 1 lemon, few slices left to one side and the juice of one lemon
  • Salt and pepper
  • 1 tsp oregano
  • 1 handful of spinach
  • 1 tbsp butter
  • 1/3 cup of frozen vegetables
  • 1/2 tsp garlic granules

Method:

To a small pot add water and frozen vegetables and cook for a few minutes until cooked.

Add a little butter, about a knob to a frying pan and add the sea Bass fillet with lemon juice, salt & pepper, oregano and garlic. Cook for 5 minutes on one side before turning over. Spoon the butter over the fish and keep basting it for maximum flavour.

Add spinach and cooked mixed vegetables to the pan and cook until the spinach becomes wilted.

Sprinkle a little seasoning and serve straight away.
