Garlic & Chilli Lemon BBQ Prawns

As it’s summer it makes perfect sense to fire up the barbecue. It’s almost like a tradition for us Brits. As soon as the sunshine comes out, the music goes on, the tennis on faintly in the background, the wine opens and the food is added to the BBQ. Except this day, the cricket for the first time ever was shown in our house, with probably one of the most spectacular endings to any sporting game when England beat New Zealand in the cricket final.

Whilst Sam was heating up the barbecue, I was getting food ready in the kitchen and Emily was chilling on the sofa, I was making these tasty Garlic & Chilli Lemon Prawns.

I didn’t make these for me. Sam loves prawns, up there with pretty much any fish but these fresh, delicious prawns were super simple to make and added the hint of spice to our foodie line up.

You can’t really go wrong with prawns. You can do anything to them to add a little flavour or a lot of spice, that can tantalise your taste buds.

These also work if you fancy eating them raw, but the dressing works better on a BBQ which gives it a delicious smoky flavour.

Preparation: 5 minutes

Cooking:

Ingredients:

  • 150g Cooked Jumbo King Prawns
  • 25ml lemon juice
  • Salt and pepper
  • 1 tsp oregano
  • 1 tsp garlic granules
  • 1 tbsp red chilli flakes

Method:

Toss all the ingredients into a bowl, coating the prawns. Leave to marinate for at least two hours or overnight covered with clingfilm in the fridge.

Soak wooden skewers in cold water for 10 minutes and add prawns stacked up on each skewer.

When your barbecue is ready at the right heat, cook for 3-4 minutes on each side and serve immediately.
